French Onion Soup-The Best Recipe Ever, provided by a Burien Undressed Reader

Here is a wonderful savory recipe for French Onion Soup that is perfect for this time of year.  Give it a try and let me know what you think or if you have a recipe you would like to share, send me an email.  Recipe Serves 4-6

1 cube butter

3 sliced yellow onions

Stir on Med/Hi for 15 min.

Grate Cheese/Mix together: Emmenthaler, French Swiss, Parmesan, Asiago (1.5-2 lbs)

Add 1/4 c cooking Sherry to onions, let cook 5 min.  Then sprinkle 2 TBS flour into onions. Stir.  Add another 1/4 c cooking Sherry, stir.  Add Balsamic Vinegar 3-4 TBS.  Turn heat to med-low.  Add 32 oz. beef broth and 1 tsp. chicken base.  Stir, let cook 15-20 minutes

Slice good french bread 1/2″, drizzle in olive oil.  Cook at 350 for 10 min each side.

Add Soup to bowls, float bread on top.

Add cheese generously…

Add salt, pepper, sprinkle with fresh Thyme.  Broil on Hi until cheese is golden brown.

Favorite October Dessert-Pumpkin Bites

Are you looking for a quick and yummy dessert for Halloween? Pumpkin Bites are one of my favorite desserts during the fall.  I got this recipe out of a kids magazine years ago.  It’s a creamy, cake-like pudding’ish texture with a cream cheese frosting.  It looks kind of like this but not as cake like.

So give it a try and let me know what you think.  Ingredients:

  • 1 cup flour
  • 3/4 cup sugar
  • 1/4 tsp. salt
  • 1 tsp. cinnamon
  • 1 cup pumpkin
  • 2 eggs
  • 1 tsp. baking powder
  • 1/2 cup vegetable oil
  • 3 oz. cream cheese
  • 2 cups powdered sugar
  • 1 tsp. vanilla
  • 1 tbsp. milk

1. Put flour, sugar, baking powder, cinnamon and salt in a large mixing bowl. Stir.  Add pumpkin, oil and eggs.  Stir again.

2. Pour mixture into lightly greased 9-inch square cake pan.  Place in oven.  Bake at 350 degrees until a toothpick comes out clean (between 18 and 25 minutes)  Remove from oven and let cool.

3. Put cream cheese, powdered sugar, vanilla and milk in a small bowl to make icing.  Stir until smooth and creamy.

4. Spread the icing over the cake.  Cut the cake into squares.  Then cut each square in half to make two triangles.
